Food waste is a major issue throughout the world and our team at Skamania Lodge took on the challenge. After years of creating best practices, dispelling accepted “Hotel Standards” and making sure that our guests understood our mission, we memorialized these practices in our book, entitled Skamania Lodge, Managing Food Waste. This is a book written by F&B professionals, for F&B professionals. We share this at no cost, and ask industry professionals to help to continually improve the content. The American Hotel and Lodging Association and the World Wildlife Fund have recognized our efforts and have completed white papers on our efforts.

Forty percent of the food that is grown in the United States never gets eaten. Food waste is a tragedy when 50 million Americans are considered ‘food insecure’.
